My family adores Nutella and today is World Nutella Day, so naturally we’re celebrating with the yummiest ricotta and Nutella pancakes recipe around. Yes, even though this is clearly the most made-up ‘day’ of all the days. Up there with World LEGO Day and World Tuna Day.

Well, there’s a reason we’re celebrating a made-up day. I think the best gift my kids ever received was the giant tub of Nutella my sister-in-law gave them one year. When I say giant, I mean GIANT giant. It felt like that thing was several kilos of Nutella.

I’m seriously embarrassed at how quickly that mountain of Nutella was eaten. I almost blinked and missed it.

So, throw aside the shame and slather these ricotta pancakes in as much Nutella as you dare. The more Nutella, the better the dish.

PS – I didn’t even mention the delicious, sweet strawberry sauce. So remiss of me.  But, you know, it’s NUTELLA versus fruit so…

Italian ricotta and NUTELLA pancakes with warm strawberry sauce

Takes: 20mins
Makes: 8 pancakes

250g low-fat ricotta
½ cup skim milk (or full cream for a denser pancake)
3 eggs, separated into whites and yolks
¾ cup plain flour
1 tsp baking powder
pinch of salt
olive oil spray
200g strawberries, hulled and thinly sliced
1 tbsp caster sugar

To serve

1 tbsp Nutella per pancake
fresh strawberries (optional)

Mix the ricotta, milk and egg yolks in a medium bowl then sift in the flour, baking powder and salt. Combine until you have a smooth batter.

In a clean bowl, beat the egg whites until soft peaks form. Gently fold the eggs into the ricotta mixture.

Place 2 tablespoons of batter into a preheated and oil greased pan. Cook for about 2 minutes, then flip to the other side and cook evenly. Remove from pan and keep in a warm oven until ready to serve. Repeat this process with remaining batter.

To make the strawberry sauce, in a small saucepan, combine the strawberries and sugar and gently stir for 3–4 minutes until a saucy syrup forms.

To serve, spread Nutella onto each pancake and drizzle the deliciously warm strawberry sauce over the top. You can also add some sliced fresh strawberries for extra decoration!
